Week 18: Eggplants

A cousin to tomatoes, peppers and potatoes, eggplants were originally white, round and egg-size. Now eggplants can be white, purple, lavender with white stripes and globe- or cucumber-shaped.

This vegetable loves sunlight, warm temps and takes its sweet time to grow. Look for firm eggplants that feel heavy for their size and have smooth, shiny skins and bright green stems.

Store eggplants at room temperature in a cool spot away from direct sunlight. Use it as soon as possible after harvesting or buying.

Eggplant is great on the grill, sautéed, braised or roasted and is full of nutritious fiber.
