Week 7: Broccoli

All About It:

Look for sturdy, dark green broccoli spears.Did you know that broccoli belongs to the cabbage family, which includes kale, cauliflower, Brussels sprouts, bok choy, collard greens, rutabaga and turnips? These super veggies are loaded with nutrients.

Broccoli is high in fiber, vitamin C, vitamin K, iron and potassium as well as having more protein than most other vegetables. If you want to reduce your cholesterol, gently steam your broccoli. Worried about getting cancer? Eat your broccoli raw.

Look for sturdy, dark green broccoli spears with no yellowing and with lots of florets. Cut florets off the head of broccoli but don’t toss the stalks. They can be cut prepared as well.

Broccoli can be stored in cold, moist conditions for around 10 to 14 days.
