Taquitos

Gluten Free Sweet Potato and Lime Taquitos with Avocado Dipping Sauce.

Ingredients:

  • 1.5 lbs sweet potato (about one large) peeled and cut into one inch chunks
  • 2 tablespoons salted butter
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 cup chopped red onion
  • 1/4 cup chopped cilantro
  • 2 limes, one juiced, one cut in half
  • 12-14 white corn tortillas, warmed (Corn tortillas will often tear if not warmed before you roll them. To warm, wrap tortillas in a damp paper towel and heat them in the microwave for 30-45 seconds).
  • Olive oil for frying

Prepare Taquitos:

Heat a medium pot of salted water to a boil. Drop sweet potato chunks into boiling water and reduce the heat to a simmer. Cook for 15 minutes or until the sweet potatoes are easily pierced with a fork. Drain and return sweet potatoes to the pot and mash with the butter, cinnamon, cumin and salt.

In a small bowl, combine the chopped red onion, cilantro and lime juice. Set aside to marinate, stirring occasionally.

In a large, heavy skillet, heat about a 1/4 inch layer of olive oil over medium heat. Working with one tortilla at a time, rub halved lime over the tortillas and then spread one heaping tablespoon of mashed sweet potato mixture and 1/2 tablespoon of the onion, cilantro and lime mixture evenly along one side of the tortilla. Gently roll the tortilla tightly, beginning on the side with the filling. Use a toothpick to secure the tortilla/taquito.

Place the prepared taquitos seam side down in the hot oil and cook, rotating with tongs, until they are golden brown and crispy on all sides (approximately four to five minutes per batch - We recommend cooking four at a time. While each batch cooks, you can prepare the next batch of four so as not to dry out the tortillas). Add more oil to the pan as needed while you cook. Remove the toothpicks after the taquitos are cooked and serve with avocado dipping sauce.

Avocado Dipping Sauce

Ingredients:

  • 2 ripe avocados, halved and pits removed, scooped from their shells
  • 1/4 cup chopped red onion
  • Juice of one lime
  • 1/4 cup chopped cilantro
  • 1 jalapeno, chopped (remove seeds and ribs for less spice)
  • 1 garlic clove
  • 2 tablespoons water
  • Salt to taste

Prepare Avocado Dipping Sauce:

Combine all ingredients, except salt, in a food processor or blender and puree until smooth and creamy. Season to taste with salt. Chill until ready to serve with warm sweet potato taquitos.
