Double Apple and Dried Cherry Salad

Ingredients

  • 1 large Granny Smith Apple, diced
  • 1 large Gala apple, diced
  • 1/3 cup dried cherries
  • ½ cup (2 oz) walnuts, toasted and chopped
  • ¼ cup pineapple juice
  • 1 Tablespoon sugar
  • ½ tsp. ground cinnamon
  • ½ tsp. vanilla
  • ¼ tsp. ground nutmeg
  • ¼ tsp. almond extract

Directions

Combine apples, cherries and walnuts in medium bowl. Whisk pineapple juice, sugar, cinnamon, vanilla, nutmeg and almond extract in small bowl. Pour over salad; stir until well blended. Let stand 10 minutes before serving to allow flavors to blend.

Yield: 10, 1/3 cup servings
