Roasted Garlic Hummus Toast with Sprouts

Ingredients

  • 6 slices whole grain French bread, sliced at a diagonal about ½- to 1-inch thick
  • 1 Tbsp. extra virgin olive oil
  • 4 Tbsp. roasted garlic hummus
  • 2 oz. sprouts (broccoli or alfalfa)
  • 15 slices English cucumber
  • ½ cup sundried tomatoes

Directions

  1. Preheat oven to 400 degrees.
  2. Brush each slice of bread with a little olive oil. Place each slice directly on the oven grate and bake for 3-5 minutes or until slightly toasted. Remove from oven and place on a serving tray or plate.
  3. Spread each toast with roasted garlic hummus. Top with sprouts.
  4. Top with sliced cucumber and then sundried tomatoes.

Note: Amount of each ingredient used will vary depending on the size of your bread slices.
