Celebrate Winter with Berry French Toast

The cold winter days are here. Why not stay in and enjoy this warm comfort food with a healthy recipe spin? This breakfast bake comes together in 10-15 minutes, then just toss it in the oven and let it do its thing!

Use any combination of berries you like — think strawberries, raspberries, blueberries or blackberries. Fresh or frozen both work — whatever you have on hand (or whatever is on sale). Contrary to popular belief, there is nothing wrong with frozen produce. In fact, often frozen produce is picked at its peak and frozen within a few hours, allowing it to maintain maximum nutrition in vitamins and minerals.

French or white bread often works best in these types of breakfast bakes, but feel free to use whole wheat if you are looking to increase the fiber content. This recipe is lightened up using skim milk. But if you are looking to make every bite count as you go through cancer treatment and need more calories, use whole milk or heavy cream. You can top with homemade whipped topping — yum!

Serve with yogurt or scrambled eggs to complete the meal and provide additional protein! How easy is that?!

Berry French Toast

Ingredients

  • 5 cups mixed berries (fresh or frozen)
  • ¼ cup sugar, plus 1 Tbsp. sugar, divided
  • 2 tsp. ground cinnamon, divided
  • 1 egg
  • 4 egg whites, beaten
  • 1 cup skim milk
  • 1 tsp. vanilla
  • 1 - 16 oz. loaf bread, cubed

Directions

  1. Preheat oven to 350 degrees.
  2. In greased two-quart casserole pan, mix berries, ¼ cup sugar and 1 tsp. cinnamon.
  3. In large bowl, combine egg, eggs whites, milk and vanilla.
  4. Add bread and soak 5-10 minutes, stirring halfway through.
  5. Arrange bread over berries.
  6. Sprinkle with remaining sugar and cinnamon.
  7. Bake for 25-30 minutes.
