Published in Pediatrics, For the Health of It, Healthy Eating Tips Author: Allison Doerfler, RDN, LD

If you’ve got children at home this summer that like to make their own snacks in the kitchen, we have some fun, fresh ideas that require very little adult supervision. Plus, who wants to use an oven in the sizzling Minnesota summer heat? We’re putting the focus on snacks that incorporate fruit. Try one of these four deliciously simple recipes!

Frozen Fruit Sticks

Ingredients

  • Choose three of your favorite fresh fruits
  • Popsicle sticks, wooden skewers or toothpicks

Directions

Choose three of your favorite pre-cut fresh fruits. Next, build your fruit skewer using a popsicle stick, wooden skewers or a toothpick. Some of the best fruits to use include blueberries, cubed watermelon, strawberries, grapes, kiwi, blackberries and more.

For a fun twist, place a banana on a popsicle stick and drizzle on your favorite nut butter or dip it into your favorite Greek yogurt.

When you’re finished building your fruit stick, place it in the freezer for a refreshing fruity snack on a hot summer day.

Nut Butter Banana Pinwheel

Ingredients

  • Your favorite nut butter
  • 1 large banana
  • Whole wheat tortilla
  • Chocolate chips or raisins (optional)

Directions

Lay your tortilla on a flat surface and spread on your favorite nut butter. Next, peel your banana and lay it on top of the tortilla. Roll the banana in the tortilla as you would a burrito. With the help of an adult, you can slice the banana into sections to create a delicious banana pinwheel, or you can choose to eat it as is.

For some added fun, you can try adding in a few chocolate chips or raisins!

Apple Nachos

Ingredients

  • Sliced apples
  • Nut butter
  • Coconut flakes
  • Chocolate chips
  • Raisins

Directions

Place your pre-sliced apples (or ask a parent for help slicing an apple) on a plate. Next, drizzle your favorite nut butter over the top of your apples. Sprinkle on your favorite toppings like chocolate chips, raisins and coconut flakes.

For some added fun, you can incorporate other fruit on top of the apple nachos like fresh blueberries, strawberries or blackberries.

Yogurt Parfait

Ingredients

  • Yogurt
  • Fresh berries
  • Granola

Directions

Fill a bowl with a ½ cup of your favorite yogurt. Next, add in fresh berries from your garden or local farmers market. For an added crunch, sprinkle some granola on top. That’s it! It’s an easy, healthy and delicious snack!
