Week 17: Peppers

PeppersWith the variety of colors, shapes and flavors, peppers add zest to any dish. From pizza to stir fry, these versatile veggies can be stuffed, grilled, baked, roasted, steamed or added raw to a salad or eaten plain.

Low in calories, peppers are loaded with vitamins A and C, potassium, folic acid and fiber. Red peppers pack the most nutrition, because they’ve been on the vine longest.

Peppers are hot weather plants that need a lot of sun. They also need even watering — wilting if too dry or rotting if too wet. Pick peppers when they are the size and color you prefer. Fresh peppers will store refrigerated for two to three weeks.
