Week 9: Sugar snap peas
All About It:
The sugar snap pea is a relatively new food — a hybrid of green peas and snow peas — developed in 1979 to meet consumers’ demand for edible-pod peas.
Tender, green peas appear in all sorts of dishes from pasta primavera and stir-fries to salads. Sugar snap peas are usually eaten whole and are delicious raw or cooked. If cooking, steam, simmer or stir-fry briefly-only for a minute or two-to retain their crispness, color and flavor.
Sugar snap peas are high in vitamins and a reliable source of fiber. Buy locally grown sugar snap peas to get the maximum antioxidant benefit from them. When shopping for peas, look for fresh, vibrant, green pods with the stem still attached.
