Dear Friends and Neighbors,

CentraCare care givers have been working around the clock for more than 20 months to care for you, your families and friends during COVID. We are committed to caring for every Minnesotan who needs us, and nothing will prevent us from doing so – even during these never-seen-before times.

The challenge of providing this level of care is that our hospital beds are often full. ERs in all of our hospitals are packed. And our clinical teams are exhausted. Early in the pandemic, our community stepped up in amazing ways to help us. We ask that you again join us in fighting this pandemic together.

How can you help?

  • Please get your COVID vaccines and booster shots. They are proven safe and effective in reducing COVID illness, keeping people out of the hospital, and preventing death.

Chocolate Banana Zucchini Bread

Ingredients

  • 3/4 cup whole wheat flour
  • 3/4 cup all-purpose flour
  • 1-1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 cup cocoa powder
  • 3 bananas, mashed
  • 1 egg, beaten
  • 1/4 cup zucchini
  • 1/4 cup applesauce
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • 1/4 cup chocolate chips

Directions

  1. With non-stick spray, spray the bottom and 1/2 inch up the sides of an 8x4x2-inch loaf pan, set aside.
  2. In a medium mixing bowl combine the flour, baking powder, baking soda, and cinnamon. Make a well in the center of dry mixture, set aside.
  3. In another bowl combine the egg, bananas, zucchini, sugar, and vanilla. Add egg mixture all at once to dry mixture. Stir just till moistened (batter should be lumpy). Fold in chocolate chips.
  4. Spoon batter into the prepared pan.
  5. Bake in 350 degree oven 50-55 minutes or until a wooden tooth pick inserted near the center comes out clean.
  6. Cool in pan on wire rack for 10 minutes. Remove loaf from pan, cool on rack.

Yield: 16 servings (1 serving = 1 slice or 1/16th of loaf)
