Dear Friends and Neighbors,

CentraCare care givers have been working around the clock for more than 20 months to care for you, your families and friends during COVID. We are committed to caring for every Minnesotan who needs us, and nothing will prevent us from doing so – even during these never-seen-before times.

The challenge of providing this level of care is that our hospital beds are often full. ERs in all of our hospitals are packed. And our clinical teams are exhausted. Early in the pandemic, our community stepped up in amazing ways to help us. We ask that you again join us in fighting this pandemic together.

How can you help?

  • Please get your COVID vaccines and booster shots. They are proven safe and effective in reducing COVID illness, keeping people out of the hospital, and preventing death.

Crispy Baked Parmesan Garlic Edamame

Ingredients

  • 1 (12 oz) package frozen shelled edamame, thawed
  • 2 tablespoons garlic olive oil
  • ¼ cup Parmesan cheese, grated
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon chili lime seasoning
  • 1 pinch salt and black pepper to taste

Instructions

  1. Preheat the oven to 400 degrees F.
  2. In a medium size bowl, toss the edamame with the garlic olive oil to coat completely.
  3. In a separate small bowl, mix together the Parmesan cheese, garlic powder, onion powder and chili lime seasoning with the salt and pepper.
  4. Add the Parmesan mixture to the edamame mixture and toss.
  5. Spread the edamame on a rimmed baking sheet and bake about 10 to 15 minutes, turning once halfway through, until the cheese begins to brown. Store in an airtight container and enjoy!
