Gravy – The Fat-Free Way

Recipe from the American Heart Association’s Low Salt Cookbook

Ingredients

  • 3 cups broth (unsalted preferred – look for 250 mg sodium or less per cup)
  • 1 tablespoon peppercorns
  • 1 teaspoon rosemary
  • 1/2 teaspoon garlic powder
  • 2 tablespoons cornstarch
  • 1/2 cup cold water

Directions

  • Bring broth, peppercorns, rosemary and garlic powder to a boil.
  • In the meantime, combine cornstarch with the cold water and stir to make a thin paste.
  • Strain out the peppercorns and rosemary after 3 – 5 minutes of boiling and return to the heat.
  • Add the cornstarch mixture to the boiling broth and whisk until it starts to thicken about 3 – 5 minutes.
  • Add to your favorite meat or potatoes.

Yield: 10 servings (1 serving = 1/3 cup)
