Greek Chicken and Artichokes

  • 3/4 pound fresh skinless chicken breasts, cubed, uncooked
  • 1-1/2 teaspoons Greek seasoning, low sodium*
  • 1 tablespoons canola oil
  • 1 cup sliced fresh mushrooms
  • 1 can (14.5-ounce) no-salt-added diced tomatoes (undrained)
  • 1 can (14-ounce) water-packed artichoke hearts (rinsed, drained and quartered)
  • 2 cups cooked brown rice
  • 4 tablespoons crumbled fat-free feta  


Sprinkle cubed chicken with Greek seasoning. In a large skillet, brown chicken in oil. Add mushrooms; cook 2 minutes longer. Drain. Stir in diced tomatoes (undrained) and artichoke hearts. Cover and simmer for 8-12 minutes or until chicken is cooked through. Serve each portion with 1/2 cup cooked brown rice and 1 tablespoon of crumbled feta cheese. 

Yield: 4 servings (1 cup chicken mixture with 1/2 cup rice & 1 Tbsp. feta = 1 serving)

Greek Seasoning


  • 1-1/2 teaspoons dried oregano   
  • 1 teaspoon dried mint
  • 1 teaspoon dried thyme    
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried marjoram   
  • 1/2 teaspoon dried minced onion
  • 1/4 teaspoon dried minced garlic


In a small bowl, combine all ingredients. Store in an airtight container in a cool dry place for up to 6 months. 

Yield: 2 tablespoons
