Dear Friends and Neighbors,

CentraCare care givers have been working around the clock for more than 20 months to care for you, your families and friends during COVID. We are committed to caring for every Minnesotan who needs us, and nothing will prevent us from doing so – even during these never-seen-before times.

The challenge of providing this level of care is that our hospital beds are often full. ERs in all of our hospitals are packed. And our clinical teams are exhausted. Early in the pandemic, our community stepped up in amazing ways to help us. We ask that you again join us in fighting this pandemic together.

Grilled Watermelon Pizza with Honey and Lime

Ingredients for pizza

  • 1 20-25 lb. seedless watermelon
  • 2 cups cilantro leaves
  • 6 oz. queso fresco
  • ¼ cup honey
  • Fresh lime wedges as garnish
  • Pickled red onions (see recipe below)

Ingredients for pickled red onions

  • 1 medium red onion thinly sliced
  • ½ cup white vinegar
  • 2 Tablespoons fresh lime juice
  • 1 Tablespoon honey
  • 1½ teaspoons kosher salt


  1. About an hour before grilling the watermelon, combine the sliced red onion, white vinegar, lime juice, honey and salt in a small glass bowl. Cover and refrigerate for an hour.
  2. Preheat grill to high (about 500 degrees F). Slice watermelon into 1.5-inch rounds using a large, sharp knife.
  3. Brush each side of the watermelon slice with the liquid from the pickled onions.
  4. Place the watermelon rounds on the grill and cook for 3-4 minutes per side or until there are some light char marks on each side of the watermelon.
  5. Place each grilled watermelon round on a large cutting board, drizzle with some of the honey, then top with a few slices of the pickled red onion, some of the queso fresco and cilantro.
  6. Serve while still warm with a fresh lime wedge to squeeze over the top.
