COVID-19 (Coronavirus) Update Learn More

Dear Friends and Neighbors,

CentraCare care givers have been working around the clock for more than 20 months to care for you, your families and friends during COVID. We are committed to caring for every Minnesotan who needs us, and nothing will prevent us from doing so – even during these never-seen-before times.

The challenge of providing this level of care is that our hospital beds are often full. ERs in all of our hospitals are packed. And our clinical teams are exhausted. Early in the pandemic, our community stepped up in amazing ways to help us. We ask that you again join us in fighting this pandemic together.

How can you help?

  • Please get your COVID vaccines and booster shots. They are proven safe and effective in reducing COVID illness, keeping people out of the hospital, and preventing death.

Kale Green Smoothie

Ingredients

  • 1-2 cups water
  • 2 cup fresh kale
  • 1 ripe mango (peeled and pitted)
  • 1 ripe banana
  • 2 tbsp ground flaxseed
  • Splenda (optional, nutrition facts reflect usage 1 tsp of Splenda)

Directions

  1. Peel mango with peeler (easier for me). CAREFULLY cut fruit from pit (mangoes are VERY slippery). Discard peel and pit. Grind flaxseed in coffee grinder and set aside (if you do not own a coffee grinder, take them for a spin in the blender and leave them in there).
  2. Add water and kale to blender. Blend until there are no huge chunks of kale floating around. This may take a minute or two depending on your blender.
  3. Add mango chunks, banana, and flaxseed and blend until smooth. After fruit have been blended, add enough water (and Splenda, should you choose to use) for your preferred consistency and take for a quick spin to mix the water well.

Drink as is, with ice, or chilled overnight. Don't forget to experiment with other greens and fruits!

This recipe makes approximately two 3 cup servings.

Keep in airtight container in fridge. Keeps well in fridge for up to 2 days.
