Salad with Sunflower Oil

Salad

  • 4 c. finely chopped kale (ribs removed)
  • ¼ c. sunflower seeds
  • ¼ c. pumpkin seeds
  • ½ c. cooked quinoa
  • ½ c. dried cranberries
  • 1 avocado, peeled and chopped
  • ½ c. feta cheese crumbles

Vinaigrette

  • 3 tbsp. apple cider vinegar
  • 2-3 tbsp. honey
  • 3 tbsp. lemon flavored sunflower oil

Preparation

  • Place kale, seeds, quinoa, cranberries, feta cheese and avocado in a large bowl.
  • In a small bowl, whisk together apple cider vinegar, honey and lemon flavored sunflower oil.
  • Pour vinaigrette over salad ingredients.
  • Toss gently and serve or refrigerate.
